My husband is not the most romantic man in the world in the "traditional" sense.  He tends to find more practical ways to surprise me.  Once, he decided to do something very creative.  He helped me create a perfect little binder to hold writings, memories, and the like.  What made this binder so special was the fact that he went out and bought a Dremel tool with a lot of attachments so that he could engrave a face plate for me for the front cover.  He had absolutely no experience with the tool, but he worked until he got the hang of it.  The best part is, I'll always be able to look at the poem on the inside of that binder and know the work that went into it.  A bonus is the fact that he has a new tool to play with.
