My husband and I have been on a very low carbohydrate diet for the past 4 weeks. This latest diet effort has helped tremendously with lowering my husbands blood sugar levels. He has type 2 diabetes.
Pretty much our evening meals have consisted of meat and salad. While it’s been said that some people eat to live while others live to eat I suppose I don’t have to tell you what category my darling fits after revealing how he nearly cried at the sight of meat and salad for the umpteenth time. It was a sad sight for a man who believes he needs carbohydrates as much as the air he breathes!
The following day I just had to break the pattern… he voiced his apprehension about “meat and salad” as if I were feeding him poison. Well I love to cook almost as much as I love my husband and decided it was time to draw on my culinary efforts to bring a much needed change to his palate.
I discovered a soy flour based crepe recipe that was very low in carbohydrates, after making the batch I got creative and used them as lasagna noodles layering sausage, mozzerella, pepperoni, and a scant of pizza quick sauce between the thin noodle like tasting crepes. The whole thing fit neatly into a pie pan and the look of relief on his face from being rescued from the meat and salad routine was priceless!
It meant so much to me to hear him say that he really appreciates my efforts to help him through the rough spots. In so many ways I truly am discovering it is the little things that cost nothing more than a little imagination mixed with a scoop of pure love that keep us in love with each other year after year.
